Homey Pot Pie

We moved. We moved just a short block down the street, which makes this move surprisingly more stressful and annoying.

While our life’s belongings were tetrised into a giant truck, I was at the new place – whole 633 feet away – unpacking the kitchen boxes, which were mercifully moved by DH a day earlier. It was a lot of boxes and not a lot of kitchen, so I was playing my own game of tetris trying to find the convenient spot for the pots, the practical place for the flatware, and logical locale for my hoard of pie pans.

At 2:44PM, when the movers were piling the last of our sh..tuff into our new abode, I was outside, waiting for my 9 year old to round the corner. I ushered her around the box towers into her new room, where she plopped onto her yet-unmade bed and frowned, “It just doesn’t feel like home.” Ignoring a new tiny hole in my heart, I assured her that it will, in just the tiniest bit.

It’ll take a few weeks for us to settle in, to time the heater just right, to learn where the floors creek, to identify the best angle on the shower handle for the ideal temperature. But on day three, I thought it was time to test our new range and oven situation.

I cooked a ton, with 3 pans going at the same time, and finished up by getting this pot pie into the oven, spiced with cumin and mellowed out with coconut cream. And while its all-butter crust was getting rosy in the oven, permeating our new open floor plan with that unmistakable, irresistible, undeniable scent of butter, my daughter walked in and exclaimed “Now it smells like our home!” So sweet and completely cheesy – I’d never make that up!
