Samosa-ish Pie

There’s no grand story behind this pie experiment – I’ve just been wanting to make a savory vegetable pie for a while. Finally, with no other pressing ideas to execute, veg pie it was!

I pan-fried diced potatoes, followed by carrots and zucchini, to a golden brown (a.k.a. delicious fried goodness). Then, to golden/delish-en it up a bit more, I threw in a touch of turmeric and a dash of cumin.

When the filling came together, with a handful of good cheddar, it resembled what you might find in a crunchy samosa. Could’ve used a bit more kick, I thought, but holding out hope that my kids would give this creation at least a taste, I opted for keeping it pretty mild.

I finished this pie with a baked egg and was seriously pleased with myself… I mean, with the pie. It was a serious “yum”. Past tense. Was.
