My Pipe Dream Apple Pie

It’s winter now, and Granny Smiths are perfectly crisp, so it’s pie time! Peeled and chopped, I toss them with a couple handfuls of blueberries, a generous sprinkle of cinnamon sugar, lemon zest, and a hardy squeeze of lemon juice. Give it a sparkling finish with a bit of egg wash and sugar. It has all the promise a pie can have.

We took one to a friends’ home and baked it in their oven, as we caught up and talked holiday plans. The pie smells filled the air, as cinnamon-sugar cooked down the fruit and the crust got its rosy color. I dare say, it came out looking quite picture-perfect. And it did not disappoint.
