Triple-C Hand Pie

It’s been a bit gray here this week – we’ve been getting some “much needed” rain. Blaming it on the dark skies, I’ve been gloomy, too.

My head in the gray clouds, I put a salt shaker in the fridge and tossed a full pack of cream-cheese in the garbage. So when I emptied a bag of baby carrots into a frying pan, my daughter, lightly concerned, asked if I was ok. I assured her mom was fantastic and continued frying carrots under her concerned gaze. Eventually, she figured I was in a pie mood, relented, and went on to more pressing tasks (e.g. re-labeling everything in her room, again).

In with the carrots went a dash of cumin and cinnamon to simmer a while, and the kitchen transported to streets of hot Casablanca*. After blending it all together with my handy hand blender, I piled heaped spoonfuls into pockets of pirog dough and watched the pies get their lovely tan in the oven.

Never having baked a carrot pie, I was quite pleased with myself. I mean, with the result. The hand pie was sweet and cuminy-cinnamony and wonderfully warm in my hand. It was a perfect little treat for a rainy day.

In the evening, the skies parted and rewarded our patience with a sunset of lavender and pink. It was beautiful.

* I’ve never actually been there, but let’s just run with it for a sec.
